Low Carb Cake 90 Seconds! Moist & Fluffy Keto Friendly Vanilla Mug Cake Recipe

um I don't even know how it can taste this 
good all right guys so if you struggle   with portion control like I do today 
we're gonna make a single serving of cake so today I'm going to show you my favorite 
cake it's a vanilla cake it has a delicious   little frosting on it kind of like a glaze but 
in a minute and a half so literally 90 seconds   you have cake it's great for dessert I mean 
just obviously whenever you're you know you   have a little sweet tooth going on or you just 
want something sweet after dinner after any meal   so I have all my ingredients pretty much laid 
out very very basic ingredients we have eggs a   little bit of almond flour our sweetener baking 
powder and then a little butter okay if you want   to keep it dairy free you can use avocado oil 
you can use coconut oil I just really like the   cake texture with butter but if you want to 
keep it dairy free you totally can using I'm   substituting the either avocado oil or coconut oil 
so I'm gonna use just like a bigger Ramekin I'm   gonna do a single but you can do a double serving 
and it'll turn out just double the time okay so   the first things first butter we're gonna need a 
little tablespoon of butter this does need to be   melted so we're going to toss it in the microwave 
you will see how quick this turns out literally   just melt your butter we're gonna toss everything 
in throw it in and boom you have a personalized   single serving cake which is great if you struggle 
with portion control because guys I'm telling you   if I have like a lot of sweet deliciousness in 
front of me I'm eating it I'm eating it so this   way I can literally finish the entire little mug 
cake and it's super satisfying but I don't have   to feel guilty yeah it's a win-win okay so our 
butter is heating up getting a little cinnamon   we'll need vanilla very basic basic ingredients 
for a cake this is just in a miniature version so so we have melted butter we have a little almond 
flour our sweetener so I use ellulose I just like   it it's my favorite sweetener for baked goods it 
doesn't have like a crazy aftertaste we have a   little baking powder this is going to be my little 
dessert today so I figured I would just make it   with you guys just giving it a good little mix to 
mix the baking powder sweetener everything through   the almond flour we're gonna just toss this right 
into our butter okay and then we have a little egg beautiful vanilla extract you can use vanilla 
Maple almond all those will work but this is   like a vanilla cake so we're doing just a little 
vanilla and a dash of cinnamon I love cinnamon so now let's just mix that together so you can use 
a mini whisk I am just going to mix this up with   my Fork so this is it guys literally just toss 
everything right into your mug into your Ramekin   into whatever you have okay just want to make sure 
that it's there's no almond flour at the bottom   only because since we use such little amounts of 
all ingredients you just they all work really well   together so we just need them all to be mixed 
okay so this is what our personalized cake   looks like before putting it into the microwave 
now this is I told you guys it would be cooked   in a minute and a half okay so 90 seconds 
going into the microwave this is a texture   just like regular cake batter it smells like 
cake batter everything this is just like a   regular vanilla cake except it doesn't have all 
the carbs or the sugar I've tried a lot of low   carb cakes Mine by far is my favorite and now I'm 
not just saying that because it's my recipe I'm   telling you it's just like nice and moist it has 
a great flavor and then I like to top this with   a glaze so anyway we'll get to that after but 
let's just go ahead and cook this going in for   for a minute and a half okay so now let's go 
ahead and think of a glaze I have a few I have   a few I have one that is a cream cheese base so 
it's cream cheese heavy cream sweetener and a   little vanilla guys that one is amazing like that 
one you can actually use over cakes you could use   over fruit like it tastes like you want to just 
eat it with a spoon that one's really good I have   just like a very basically so I'm just trying to 
think of like what I'm in the mood for right now   let me pull out the ingredients and 
we'll we'll come up with it right now   but this right here guys it's a winner I'm telling 
you all right guys so look at our personalized   cake very very beautiful you can see the little 
air bubbles so you know that's cooked all the   way through we're gonna set this aside 
and just quickly make our little glaze   I decided to go with like a cream cheese 
glaze I just think it's delicious and   um it goes so well with like a vanilla cake 
I like to top it a little bit of strawberries   and then the glaze guys okay so I'm gonna grab 
a little bit of cream cheese and then you can   use heavy cream which I have here you can use it 
okay a little a little heavy whipping cream but   just to kind of save a little bit on the calories 
I think it's still going to be nice and creamy   and give me the glaze that I want just with a um 
almond milk but if you want the richness guys I'm   telling you if you want the richness instead 
of using the almond milk use the heavy cream so good so so good but I'm actually gonna 
eat this right now and I don't want to   go like overboard so I'm gonna do um I'm 
gonna do it make it with with almond milk   so we're just gonna do a little cream cheese 
sweetener almond milk and wait until you see the finale okay cheese and cheese soften it okay and then little alilos I'm telling you elilos 
for me is my favorite I've told you guys that I   tell you all the time because I feel like when 
you're living a low carb lifestyle people always   have an issue with sweeteners they're like oh it 
has a funny appetite like erythritol is the one   that leaves that cooling effect kind of like the 
mouthwash Stevia sometimes has that bitterness   but alilos doesn't so that's why I love it okay 
so we have our cream cheese which is very very   hot now probably left it in there a teeny tiny 
bit too long but look at that okay so it's just   nice and creamy okay and we're gonna add in our 
sweetener and you can use your sweetener of choice   okay seems like a lot but remember it's 
a glaze so glaze are meant to be really   sweet think of it like a frosty you know mix 
that up until it's just nice and smooth you   don't want any I use like a powdered Ellie 
low so I don't worry about the granular   so it doesn't feel chunky to me but look 
at that even just with the cream cheese   and the sweetener this is great even for like 
cinnamon rolls you do need a little vanilla and now the only thing you want 
to do with the almond milk is   um basically add it to your liking how 
thick do you want your your glaze or   your Frost it's more of a glaze I can't 
call this a frosting but that's pretty   much what we're doing is just getting 
it down to the consistency that we want this is so good honestly I am kind of feeling 
this consistency it's not too thick not too   thin so I don't think I'm gonna add I'm not gonna 
add any liquid to this we're just going to keep it   as is so no almond milk okay if you guys want 
to add a little so that it kind of sinks into   the cake kind of like a Tres Leches Vibe you can 
totally do that just poke holes and then drench it   bomb let's do some strawberries I think I 
think we're gonna go with strawberries I   feel like it's just gonna look pretty um if 
I was eating this just like without kind of   bringing you guys along I would literally just 
pour this and then go sit down and eat it but   to make it look really beautiful I think 
that I'm gonna add the strawberries and I   think like overall it just gives it like 
a freshness that looks really pretty too   so now let me just kind of cut around not cut 
around it but just make sure that I'm able to look at how fluffy it is just nice and fluffy 
just so it doesn't stick all right guys   Moment of Truth here we go I feel like it 
looks prettier on this side that's more flat   for our strawberries so we're going to add 
in our strawberries and then we're gonna top   this but let me just figure out how to cut these 
real quick so the first thing we're going to do   before we get into the strawberries is pour our 
glaze okay so Avi you can pour it right on the pop see how it's thick enough to where it just sits 
if you want it to kind of run down you totally   totally can sometimes it just looks so yummy when 
it's like drippy okay and now for our strawberries I feel like at this point like with 
strawberries it would just be a matter of   you know whether you want to slice 
it whether you want to I think I'm   just going to half it just so 
that it looks nice and pretty nice and pretty look at that guys this is actually 
a really good size to even share so if you and   your hubby you and your kiddos like you could 
literally cut this into like little pieces and   just have a small piece or if it's for yourself 
and you don't trust yourself to make the full   um like a full sheet then this is perfect because 
you can have this in one serving or you can even   have it in two I am gonna have like a slice of 
this with my strawberries and then my glaze but   guys look at this beautiful personalized cake 
literally Cooks in a minute and a half and it's   low carb it's good for you ingredients like 
it's like a win-win across the board you know   I don't know why I think um strawberry season 
is kind of going out so we have these teeny   tiny little strawberries bottom line is I just 
put them up there so it can look nice and cute   now we are going to cut right 
in I want you guys to see Z texture inside so you can see that it 
is like a real legit cake look at that you see that um and guys we have to there's just no 
way around it get that perfect bite   I have a little bit of extra frosting over here I've been waiting for this um I don't even know how it can taste is 
good you cannot tell this is low carb   you have to make this like I'm telling you the 
texture the glaze strawberries across the board it just tastes like tastes like cake just tastes 
like cake this one here you can make different   variations um this is my favorite I just love 
it like with strawberries I think it goes really   well with fruit let me know if you guys want to 
see maybe like a chocolate version because that   you do have to modify it a little with you know 
the cocoa powder and stuff like that maybe even   like a peanut butter comment down below just let

10 out of 10 that used to be my birthday cake   growing up that has Leches all the way so um that 
one just takes a little bit more because you have   to make the milks on the side but there is a way
