LCHF/Ketogenic Low Carb Egg Puffins – Flexible breakfast/snack recipe that will surely hit the spot!
These are very easy and quick to make mock muffins to replace your high carb drive-through previous lifestyle breakfast muffins you used to have pre-ketogenic pre-LCHF lifestyle.
Use any vegetables you may have in your fridge. Chop and add to the egg and spice mixture. Add grass-fed butter to raise the fat level and enjoy any time of day! You don't have to eat these in the morning only. you can have them anytime as a snack.
INGREDIENTS:

2 whole eggs
6oz of egg whites
1/2 cup of chopped green chard (or any other low starch vegetable)
1/2 cup of chopped spinach
1oz of leeks (use onions if you like)
1oz of Parsley
1oz of mushrooms
3 garlic cloves
1oz of smoked salmon (or any protein you have available)
1 tbsp of butter
Spices:

I used:
Sea salt
Cumin
Paprika
Parmesan cheese
Feel free to use any other spices you like.

For the above ingredients you can get 6 puffins:
Each puffin will have:
1g of carbs
3g of fat
7g of protein
If you add the mayonnaise at the end you'll increase the fat by 1 or 2 grams each puffin.
