Low Carb Breakfast “Cereal”, Grain Free, Gluten Free, Keto
This is a perfect substitute for breakfast cereal for all of the following:
– low carb diet
– grain free diet
– gluten free diet
– keto diet
Ingredients:
– 1/2 cup chopped almonds or pecans or walnuts or cashews (I like a variety)
– 1/4 cupĀ almond flour
– 1/4 cup vanilla whey protein powder (egg protein tastes great too, see links below)
– 1/4 cup butter or coconut oil, softened
– 1 tsp vanilla
– 1 tsp cinnamon
– 1 to 6 packets of Truvia optional sweetener depending on how sweet your protein powder tastes. Try it a few times and adjust to taste.
1. Preheat oven to 300 degrees F (170 degrees C).
2. Combine sweetener, crushed nuts, almond flour, whey, vanilla extract and cinnamon in a small bowl.
3. Cut in butter with fork or pastry blender until mixture resembles coarse crumbs.
4. Place on a cookie sheet with defined edges or the butter will leak off.
5. Bake for 12-20 minutes or until golden brown.
6. Remove from the oven and gently stir while still hot.
7. Let cool in the cookie tin
8. Break any large pieces apart and enjoy with unsweetened almond milk or on top of yogurt.
